Introduction

Historical significance
- The word poke (pronounced as POH-kay) means “to cut crosswise into pieces.” which refers to how the fish is cut.
- Poke began when fisherman would season the cut-offs from their catch and eat it as snack.
- Initially Poke was made with reef fish, seaweed, and seasoned with sea salt. The sea salt was used for flavoring but most importantly it was used to preserve the fish.
- Most historians believe that the word poke was used to name the dish around the 1960’s and 70’s which coincided with the availability of ahi tuna.
