Lobster

-First discovered the 17th to 18th century in North America.

-North America had so much lobster that they were piled up to 2-feet high in Massachusetts beaches. -Many looked at lobsters as trash because of the lobsters physicality.

-They were very cheap and plentiful.

-Native Americans used them as fertilizers

Historical Significance?

-Used as fertilizers by the Native American community because there were so many. Used as bait while fishing.

-Great food source and a great protein.

-A very healthy food, has omega 3 fatty acids, vitamin E’s and B’s.

-Was considered a poor man’s food. Lobsters were given to prisoners, slaves, servants, and peasants.

-Servants even had a strike that they did not want to be served lobster every day, no more than three times a week.

-In 1800s, canned lobster was introduced and was very affordable. It was considered one of the most popular canned food products.

-At the end of 1880’s prices started going up.

-Turned into a delicacy during World War II.

-Now it is one of the most expensive types of seafood. This shows a huge shift and demonstrates the more rare a food gets, the more expensive it gets.
